OSMO 005 (Carcine Osmolith)

Carcine osmolith, synthetic truffle of the sea, edible odorous stone; OSMO 005 is formed by reducing 1.5 kg of green crabs to a hard lump the size of a ping-pong ball. Deeply fragrant, borderline offensive, and thrumming with the force of the Atlantic, OSMO 005 may be finely microplaned over a dish to instantly fortify it with salinity, bass, and funk. Try on pasta, poached egg, or crème brûlée.

Truffles are not immune to carcinization.

  • Clean 1.5 kg of whole green crabs
  • Boil in enough water to cover for 4 hours
  • Strain out all solids
  • Continue reducing over low heat, stirring often, until a thick syrup is formed
  • Dehydrate at ~70°C for at least a week until solid and completely dry
