OSMO 003 is an unctuous garum made from whole green crabs and rice koji. Protease and amylase enzymes facilitate slow-rate Maillard reactions, creating a rich broth of polypeptides, aminos, and melanoidins. This atramentous concoction leads with deep caramel flavors, rich umami, and clean salinity; the sea is a distant memory.
Aged for 4 weeks at 60°C in a sealed vessel. Estimated 10% salinity.
Try aging only 1-2 weeks for a sweet, fragrant broth reminiscent of Bouillabaisse.
- 5 parts liquefied whole green grab
- 5 part water
- 1 part rice koji (Cold Mountain preferred)
- 1 part sea salt
Replace an equal amount of soy sauce with OSMO 003 to add deep, complex umami to any dish.
